Gelegen aan de voet van het kasteel Catare de Queribus, 40 km van de Middellandse Zee ligt deze wijngaard.

De druiven worden met de hand geoogst nadat zij hiervoor de juiste rijping heeft gehad.

In de mond onthult de wijn een boeket van donkere zwarte vruchten, met geuren van specerijen en liquorice. Een lichte vanille afdronk blijft lang na.

Perfect bij geroosterd of rood vlees.

TERROIR
In the Agly Valley, near the village of Maury, the vines are planted at the foot of the famous Cathar castle of Queribus, around 40 km from the sea.
The vineyard is very well-exposed to the heat of the sun.
Soils of black schist and black clay marl.
VITICULTURE
Sustainable. Low impact farming.
Green harvesting to control yield and concentrate flavours.
WINEMAKING
Hard-harvested into small crates with a first bunch selection as the cunches are cut, and then a second sorting of individual grapes at the cellar door. The fermentation is kept between 30-32°C to maximize the fruit expression. The wine macerated for 4-5 weeks with daily pigeages. 70% of the wine was aged for 6-9 months in 225 liter barrels and then blended with wine aged in concrete vats which retains very expressive fruit flavours.
TASTING NOTES
Black as the inside of a witch’s hat, this is smoky and enticing, with notes of liquorice.
On the palate, this is a huge wine, loaded to the gunwales with dark, super ripe black fruits, spiced rum and just a hint of vanilla.
